Comfort Food: Homemade Beef Stew


Beef Stew Ingredients


  • 2 Pounds Chuck Roast, Cut Into 1 Inch Cubes. Flour For Coating Beef

  • 3 Tablespoons Olive Oil

  • 1 Onion, Coarsely Chopped

  • 4 Cloves Garlic, Minced

  • 6 Cups Beef Broth, Or Add Stock Cubes Or Base

  • 2 Tablespoons Tomato Paste

  • 2 teaspoons Salt

  • 1 teaspoon Pepper

  • 1 teaspoon Dried Thyme

  • 2 Bay Leaves

  • 4 Carrots, Peeled & Cut Into 1 Inch Pieces

  • 4 Celery Stalks, Cut Into 1 Inch Pieces

  • 3 Peeled Potatoes, Cut Into 1 Inch Pieces


Directions For Beef Stew


  1. Heat olive oil in a large pot over medium high heat

  2. Add beef pieces, a few at a time, to a plastic bag with flour. Shake bag to coat the beef

  3. Add flour coated beef pieces to olive oil. Brown on all sides, stirring for about 5-7 minutes

  4. Remove the beef from the pot and set aside

  5. Add the onion and garlic, saute for about 2-3 minutes

  6. Add the beef broth, a little at a time, scraping the crusty bits from the bottom of the pan

  7. Add the remaining ingredients, including beef, carrots, celery, and potatoes

  8. Bring everything to a boil, then reduce the heat to low and let the stew simmer for about 2 hours
